The Problem
My kitchen is barely big enough for one person. I have about 2 feet of counter space, three cabinets, and a mini fridge. I want to cook but there's nowhere to prep, nowhere to store ingredients, and I end up ordering takeout because the kitchen feels unusable. I live in a city apartment and moving isn't an option right now.
The Plan
Week 1-2: Maximize Every Inch
Install a magnetic knife strip and hanging hooks on the wall โ get things off the counter and onto vertical space
Get an over-the-sink cutting board โ instant extra counter space
Use the inside of cabinet doors: mount spice racks, measuring cup hooks, and small shelves
A rolling cart or bar cart becomes a portable prep station and extra storage โ wheel it in when cooking, out when done
Declutter ruthlessly: do you really need 6 spatulas, a waffle maker you used once, and 15 mugs?
Week 3-4: Adapt Your Cooking
Embrace one-pot and sheet pan meals โ less prep space needed, less cleanup
Get multi-purpose tools: an Instant Pot replaces a slow cooker, rice cooker, and pressure cooker
Prep ingredients in stages: chop vegetables, put them in a bowl, then use the cutting board for the next item
Store dry goods in stackable clear containers โ they use space more efficiently than bags and boxes
Cook in batches on the weekend so weeknight meals just need reheating

Follow-Up Result
4 weeks in: my kitchen feels twice as big. The magnetic knife strip and wall hooks freed up an entire drawer. The over-the-sink cutting board was a $20 game-changer โ I actually have prep space now. I got a small rolling cart from IKEA for $30 and it holds my Instant Pot, oils, and spices. Decluttered 2 boxes of kitchen stuff I never used. I cook 4-5 nights a week now using mostly one-pot recipes. The Instant Pot is the MVP โ it does everything and takes up one spot on the cart. My takeout spending dropped from $300/month to about $80.Know someone with this problem?
